I understand it is in reference to Alan Turing who killed himself by eating a cyanide-laced apple.

There's actually a funny story about the naming of Apple.
It turns out when Jobs and Wozniak first started the company they didn't have a name picked-out. The night of the deadline when they had to file the name, there was an apple sitting on the table. It was decided if they hadn't come up with a name that was agreeable by midnight that they would call the company "Apple". The rest is history.

I believe that it was Bill Gates. Apple stated that he stole from them, I believe that the bite was added after the accusations started, maybe as a way to say that they were bitten by the windows monster. I could be wrong, but it sounds nice.
