Same question may be asked this way aswell why do things get cold when you take away their contained gas ??

Laws of Thermodynamics. Expanding gas changes volume and pressure rapidly while being expelled from the can. Laws of Thermodynamic dictate that the temperature of the gas must drop. That is how your basic snow gun works on a ski slope.

As the pressure inside the can drops, the temperature goes down. Ever notice the tube of a pump or compressor gets hot when you use it? The opposite reaction is happening. Pressure increases so temp goes up.

In its simplest form the equation is: T= P/V

I believe its because there is liquid nitrogen in them that keeps the oxygen cold and compressed, and when you release large amounts of oxygen the nitrogen gets released and thus it gets freezin cold.
