I've been a fan of the Rolling Stones since 1963, and have almost all their albums and CDs, but I have too many favorite songs to list. Some of my favorite albums are:

I think I know which live version of Midnight Rambler you're referring to, and yes, it's great.
I'd hate to have to pick an overall favourite, or even top five favourite Stones tracks. I'm no great admirer of their recent stuff, which seems like a desperate attempt to regain the lost magic.
But from the 'magic days', apart from the many classics, I always felt these songs got a bit short-changed in terms of recognition:
'Moonlight Mile' (off 'Sticky Fingers')
'Sweet Black Angel' ('Exile On Main Street')
'Rocks Off' ('Exile On Main Street' - not really obscure, but better than some of the more celebrated stuff.)
'Love in Vain' (well, not their song, but still; off 'Let It Bleed')
'Memo From Turner' (off 'Metamorphosis')
'No Expectations' (their saddest ballad, and one of Jagger's best vocals, from 'Beggar's Banquet)
'Starf*ucker' (from 'Goat's Head Soup')
'Waiting On A Friend' (from 'Tattoo You')
