I know that the presence of Ions allow for conductivity of electrons, I am just wondering why?

If something is an ion, it means that it has a charge; that means that there is a loose electron somewhere that's not firmly tied up in a bond. Get lots of ions together, like the aqueous solution of table salt & water Na+ cl- & the electrons are floating around wild & free - almost. Give it an electrical charge & the electrons from the charge wade into a sea of fellow electrons - everyone's doin the ionic two step & the charge is through the solution before you can say : " Is this water distilled? "
(distilled water , nearly ion free, does not carry charge very well.)

the same to you. No idea. Just know it can conduct electricity.

so they can interact and you can live, that's why.
