if its unplug...will the car run good?

If you unplug the EGR valve you will get excessive predetonation !!!! [ valve clatter ]

You can disconnect the sensor, but you will then drive around with the "Check Engine' light on, and when something REALLY important fails, you won't know it because there is NO "Check Engine" light # 2.
Second, it is illegal to tamper with emissions control components.
The sensor is not all that expensive and pretty easy to get. It is something you can change yourself in about 10 to 20 minutes.

Yep, it will run fine. If you EVER have any troubles with your car dying at stoplights, that's the first thing to do. Remember to be sure and take a screw and plug it into the vaccum line that you take off so you don't have a vaccum leak. Good luck.
