You could do a Christmas Hawaii luau theme.... You could have pretty hawaiian colorful drinks (no alcohol) and get the little umbrellas in each Glass... Get grassy skirt coverings for around the tables and hawaiian decorations.. Get lei for everyone to wear around their necks when they arrive. You could make sure the leis are red and green for the Christmas theme... Red hawaiian type table cloths with red and green candles. Get Hawaiian red punch and have Red Lobster make up a shrimp and vegge tray.. Play Hawaiian Christmas music (like elvis) get Hawaiian pictures for the background and make the Christmas tree with red and green hawaiian decorations.You could have the guest wear something hawaiian and have grass skirts for all of them.. I know Party center and specialty stores handle alot of the hawaiian stuff or you could probably order online.. this type of theme is endless and I hope this helps you...ALOHA

How about a winter ball, you can wear formal attire and have a sit down dinner. Decoration can be fake snow and x-mas villages, oversized snowflakes hanging from the ceiling and white lights soft white organza....you get it...
I wouldn't go with a religious theme because chances are not all 200+ employees are the same religion so that may not be a good idea...

"The King's Dinner!" Christmas celebrates the birth of the King of all kings into the human race--if then He was born in a humble manger by the bleating sheep and lowing cattle, we commemorate that majestic moment 2000 years later by throwing the kind of party a king deserves. Like going to a royal feast, people should come in black tie attire.
As for the entertainment, get a jazz band to play songs centred around the birth of Christ. A group of employees can do a Christmas play on stage. Then as the dinner proceeds to dessert time, you hand out ribbons or balloons to employees whose work or mere presence is appreciated in the office. As the grand finale, you can remind the audience that they're here to celebrate the birth of the King of kings and that he is present at this celebration, then invite everybody to do one minute of a standing ovation for Jesus.

A cute and fun theme might be Santa's workshop, with "elves" and toys and festive holiday food. Another might be Snow creatures, decorated with everything from polar bears and penguins to reindeer and the Abominable snow man. With these ideas, you can stick to a holiday theme without bothering the non-religious.

Maybe you can try the following themes:
1) Hollywood stars
- everyone dressed as one of their idols, so there might be more than one celebrity, but it will be fun!!
2) Under the Sea
- everyone dressed as the underwater sea animal and it will be fun to use the song "car wash' like the cartoon movie...
