As far as i know, stereo means two channels. so if these new amps have 7 channels, are they really just 2 channels with more outputs?

8 speakers, but is it really useful?

7.1 is capable of sending 8 discreet signals to 8 speakers. The 2 front channel, one center, 2 side, and 2 rear, or "surround" channels, and finally the subwoofer. The recording would need to contain at least 8 seperate tracks that are made to be sent seperately to specific speakers.

What I believe they are refering to is the Dolby surround sound channel. It used to be version 5.1, and that I believe has been upgraded to 7.1.
