okay you have 3 pots and one of them have ice in it and the other is melting and the other is boiling

If there were two substances with the same melting point and the same boiling point -- then you wouldn't be able to identify them in this manner. Therefore, if you can use this tool to identify substances, it must be because each substane has a unique melting point and boiling point.
