Yeah, it actually is just referring to the "U"niversity. Last year, they brought out their really old uniforms that had the red and black hurricane flag on it. I've included a link below that answers the question and refers to a bunch of other Hurricane traditions.

The school's athletics logo is a simple green and orange letter "U." Nike is the official supplier of uniforms, apparel, and various athletic equipment to all University of Miami sports teams.

It was selected as the official logo back in 1973 when the athletic department realized that there were several major schools with the initials "UM" so looking to be different they just went with the "U" and did one half in green and one half in orange.
