it should but since you are still on an American plane it probably stays at 21

Its still 21. If you stayed on the plane you were never processed into Canada so you are not in Canada. You are still under American law until you get processed into another country.

It's still 21 on the plane. Once you step off the plane and onto Canadian soil, you're all good!

I'm pretty sure as long as you're still on American property, American laws apply. But drinking ages are set by state law, so it's hard to say. I would say American law would still prevail in that situation.

19, the plane is not permanently affixed to the ground. Just like being on a cruise ship and entering international waters.

Plane won't matter, you would have to get off and you can drink in the airport bar. Some places here are 18.
