The only thing I could find online about it was that it is the equivalent to "giving it the ol' college try". Are there other meanings?

As one of the coolest people I personally know...let me put you onto a little knowledge. I often find that I Iearn best when I have examples I can relate to...so let me see what I can do for ya! Showboatin' would be when you walk out your front door, wearing your best/most expensive outfit on a great self esteem day. You know you look good, and you know that everyone else knows you look good....Showboatin' is going to the most exclusive restaurant/club, getting a VIP table for you and all your friends while regular folks and other VIP's watch you and your girls party, dance and drink(preferably champagne!) the night away.

It means showing off in some form. Usually a skill. Such as showboating your awesome skating skills in front of the girls.

I understand that "showboating" is the equivalent of "being a ham" onstage; that is, taking all the attention for yourself by overacting (or what others perceive as overacting).
