Maple trees can be pruned anytime, fruit trees should be pruned in late jan or feb

Well to tell you the truth I see a limb that needs to be cut off I cut it. I know you suppose to prune in winter but I do it anytime it needs to be done and have not lost a tree yet. Small plants yes they are not as hardy as the trees are.
But for your question late fall or winter is best according to the books and rules.

wait until the maple tree has lost all its leaves then prune.. this is the best time, but if the tree has a couple years of growth, you can wait until spring without damage to the tree..but when it is dormat, is the ideal time..

wait for the tree to become dormant. This will not happen before about november if you want to be safe. And later than february is becoming a bit too late. Spring is probably the worst time, as the tree becomes alive again, is making huge efforts, etc.
