i need to know what equipment, herbs and spices, vegetables, fruits, grains and practicly anything that they use when they cook its for gcse coursework

bay leaves
cardimon
cinnamon
jheera
dhania powder ( coriander)
ground ginger and garlic
fresh coriander (dhania)
curry leaves
onions
tomatoe
black pepper
green chillies

There are so many ingredients in authentic Asian cookery that a list would take too long here.

I suggest you simply do a search on the web.

Or, have a look at 'Cooking Like Mummyji' by Vicky Bhogal - it's a wonderful British Asian cookbook with lots of tasty recipes.

Hey my stepmum is Indian and cooks all the time, if this helps she uses:

Curry powder
Tumeric
Saffron
Cloves (In Dahl)
Tomatoes
Potatoes
Garlic
Onions
A hot plate for chappatis
Molases
Chappati flour or brown flour
Poppy seeds

And many more which I can't remember the names, sorry

Borrow a book on Asian cookery at your library - you remember those, big buildings with lots of books. Books, you remember them, like the internet, but written down...
