I want it to be secure, as i am going to keep throwing knives in there, so it has to have a lock, and it has to look like a normal shelf.

possibly make it with the bottom on special hinges so when u press a catch release button on the side, the bottom pops open and reveals the knives.

Anyone seen Mr and Mrs Smith? kinda like the cooker, just less high tech!

You could route a cavity into the bottom, surface a piece of stock out of the same material your shelving is made of, and figure out a way to hinge the door or release the cover of the recessed area.
Hinges, and spring loaded magnetic catch.. The type of catch where you push it in and it will pop out.

Just a thought.

I think rather then rebuild all of your cabs. I would look for a box something like you use to get when buying silverwear and put a lock on it to hold your knives. If worried about it going anywhere. Open it and run screws through the bottem and into the surface where it would be kept.
