Unicellular organisms have but one cell, so the elodea is multicellar and the brine shrimp are also multicellular. Yeast organisms are unicellular.

An organism consisting of a single cell, such as paramecium, is unicellular. If there are more than a single cell, such as is true for a brine shrimp, they are known as multicellular. And if they are members of the eukaryotic side of the ledger then the cells will have membrane bound organelles contained within them, most specifically the nucleus.
