As I was going to Saint Ives I met a man with 7 wives.
Each wife had seven sacks.
Each sack had seven Cats.
Each Cat had seven Kittens.

I was going to Saint Ives. The others were heading in the other direction. They take a dim view of polygamy in Saint Ives. :>)

There were seven wives, seven sacks, seven cats and 49 (7*7)kittens which is 70. Including the man, it is a part of 71.

They may have some problems finding a room.

well there are five possible answers:

considering the fact that you could have met these people who were also on the way to St Ives (not specified if they were coming or going) it could be 2802 (2401 kittens + 343 cats + 49 sacks + 7 wives + 1 man + yourself)

however if they were coming from St. Ives when you met them the answer would be 1 (just you)

now if you met the man and he was there alone but simply telling you a background story of his wives and what not it could be 2 (you and him)

now if you're asking how many kittens, cats, sacks and wives went to it (considering they were with the man, and on their way to St. Ives) the answer would be 2800 (2401 kittens + 343 cats + 49 sacks + 7 wives)

the answer also could be 0 either if the man was alone and giving a background story (if asking only for the kittens, cats, sacks, and wives and not the man), or if the wives and everyone was with him, yet they were heading away from St. Ives the answer would still be 0

1 man + 7 wives + 49 sacks+ (49*7) cats + (343*7)
= 8+49+343+2401
=2801+ 1 = 2802 if everyone in the question was going to St Ives
However i believe only 1 person was on his way to St Ives and the rest were just to confuse people

none....the question states, Kittens, Cats, Sacks and Wives - How many were going to St Ives?
None of these was going there.

I was the only one going there. The other gang was going in the other direction, ie away from St. Ives.
