It depends on the current popularity of a subject. I included a list below, it doesn't seem to have any real reason for the phrases. Though you can get a sense of what people were looking for. Though, if it has nothing to do with your website no one is going to click on the ad. & no advertiser wants their ad on an irrelevant site. & if you just put a site up based on top key words you probably won't have visitors long enough to click on anything.

It's easy to find the highest 'bid on' keywords online. You could simply search for high paying keywords.
However, that keyphrase is misleading. Just because it has a high bid amount, it doesn't mean that you'll get the highest payout.
One of the topics that is always listed as the highest is mesothelioma.
Since this is a very expensive keyword, advertisers are more critical about how much they're spending and where. So content related ads (AdSense) have been lowered due to their low rate of return on some niches.
There's a lot of factors that will contribute to "a high paying Google AdSense topic". You can find more information in the site below.

If you search for "niche keywords" in google, yahoo or msn you can get a list of sites which provides a list of keywords stuff. But you should understand one thing. If you know the maximum payout adsense topic or keyword will you give it to everyone or u keep urself and make money. The same thing happens in those website. So you better do some R & D and find out the keywords. Goog luck.
