Pumpkins produce ethylene gas which causes them to ripen & turn orange. On days when the sun's not beating down all day put a plastic bag around them. Try to keep the plastic off the pumpkin. That will trap the ethylene and raise its concentration and hasten the ripening. Take it off at night because it need oxygen too. This also works on tomatoes and banannas.

My advice is tune in to the garden, and the particular plant, and the soil theyre on and do night watering frequently while talking to the plant (and the others, since they are all kind of meshed in there together) asking the plant(s) when theyve had enough water; knowing that they know what you are doing (asking them to ripen).
