After a cow is milked, the raw milk is allowed to sit for a period of time. The cream rises to the top because it contains most of the milkfat and fat is less dense (the same principal as oil and water not mixing). The cream is then skimmed off and is churned -- simply stirred rapidly over a period of many minutes (when I did it as a child, we used a glass churning jar with a lid assembly which consisted of paddles which fit inside the jar, a gear mechanism in the lid and a cranking handle). The cream must remain cold. You can actually observe this sometimes with whipping cream if you whip at too low a speed, you will get small lumps which are butter. The liquid that remains is what was historically called "buttermilk". The buttermilk you buy in the store now is actually cultured buttermilk, which is a fermented product.

Milk a cow. Put it in a big jar in and let it set. Then you take a cloth and pour the milk thur the cloth. Then put the jar back in the ref. Then a while later you take a spoon and take the stuff floating on top of the milk off. You can do that a few times .It's called Cream.
Then you churn the cream and it turns into better. You want some homemade butter.......

It's the cream which comes to the top of milk, then it's churned into butter. Better than Margarine anyday!!!

my kids made some at school with whipping cream. They took jars, poured in the cream, put a marble or two in and closed the lid. They then shook it for who knows how long and...voila!butter!
Now , don't ask what's in margarine... that's a scary story(plus, I don't remember it, but gross!)
