and CONTROL SAMPLES are?

control samples are the ones you aren't experimenting with. Merely observing for a comparison to the ones you are.

To calibrate an instrument, sometimes the best thing is to test a known sample and adjust the machine so it reads what you expect the sample to be.
Control samples maybe be one takes several samples from the same batch. Some you leave alone and some you do things to. Then test them all and compare the doctored ones with the ones you left alone and see the changes, if any.
Clinical trials of medicine, treatment are critical to have some that are given the same checkups, plus a placebo and see if the new drug/treatment makes any difference compared to the control/placebo patients.

Grev summed up what a control sample is pretty well. A known sample is just any sample where all of the variables of interest are known. So, in a sense, a control sample is a more specific known sample, but just not tested on.
