Popcorn doesn't pop because of the oil. It pops because the water inside the kernel turns to steam and the pressure blows the outer shell apart. The starch inside poofs out for the same reason. All the oil does is help transfer the heat to the kernel.

The oil has nothing to do with the popping except to carry heat to the kernels. What happens is that the inside of the kernel gets hot, the moisture inside turns to steam and that builds the pressure inside the mostly air tight kernel. When the pressure is greater than the hard outside (the hull) of the kernel can hold POP!

Popcorn pops by heating the internal moisture to the point it turns to steam. Once this occurs it has to escape. During the process of escaping the heated steam cooks the internal part of the corn and as it explodes it turns inside out. This is accomplished by heating the corn with air or grease.

The 'pop' comes from moisture (inside the kernal) turning into steam and the steam pressure pops the kernal. Oil is used only to distribute the heat evenly around the kernal in a non-microwave heating environment.

Yes. My brother, sister and I used to get a kick out of tossing popcorn kernels into our fireplace in the wintertime and watching them pop open. No oil!

Heat boils the water in the kernel which expands it explosively causing it to pop. How the kernel gets hot doesn't matter. Can be from contact with hot oil, hot air, etc.

there is oil in the kernel itself...the heat, be it a microwave or stovetop, heats up the oil until it "pops"
