Because demographically, the average American family has 2.5 kids, and it's easier for the show's writers to write material for 3 kids than 2, as there's more dynamics in the relationship with a third kid -
also, minor actors are not allowed by law to work very many hours in a given day, and if you don't have all 3 kids on the stage at once, you don't use up those kid-hours as quickly.

If you think about it, they all don't! Such as The Brady Bunch, The Partridge Family! Just to name a few!! B.B. has 6 kids and Partridge Family has 5 kides!

malcolm in the middle has 4 kids and another is added later in the show..... arrested development has 2........family on nip tuck has only 2 kids.....so which shows do u mean......i dont think that there is an unequal balance towards 3 children in shows

Because they have to always have:
A. the oldest dramatic one.
B. the middle child who they focus on A LOT!
C. the youngest...the cute one.
