Honestly, they're not worth the rebuild...I'd skip this project man.
If you really want to keep it and upgrade it, stick to simple things for the engine. This engine is 11 years old, and nitrous will blast it apart. Besides, what's the sense in pumping nitrous through a stock engine? You're not going to get the gain they promise without opening a lot of the airways up in that engine, and it just won't work with an engine that old. Maybe you can drop an intake on it, and a new exhaust, but anything beyond that is just going to be a waste. And $700 for 50 extra horsepower? That's just a waste.
A new engine with installation in that car will probably run you into $3-4,000. It's just not worth trying to do that to a 95 Escort. Besides, you already said it runs fine...don't waste your money man. You'll thank yourself in a few years when it comes time to buy a more serious and respectable car than an Escort.
Once you start dropping upgrades into it, it'll start getting the computer all screwy. Then, with all of the upgrades, if something goes wrong and you can't fx it yourself, you're going to have a hard time finding a mechanic who will be willing to fix it...some just don't like getting into that unless they're a tuner shop, and no offense man, but I don't think anyone will take you seriously with a 95 Escort. It will become a money pit, and even if you do have the--say, $6,000--to drop into all of your engine, body and stereo upgrades, it'll become a money pit...trust me, it never works out like you plan.
Your car will be off the road for AT LEAST 2 weeks while the engine is dropped, fitted and tuned. That may even be quick, and no matter what yuo do, it'll always be an Escort.
I'm not trying to knock your car or anything, just trying to save you from wasting your money. Stick to oil changes and standard maintenence. If it's running well now, keep it running well until it comes time to upgrade vehicles. It'll even help out--a tiny bit--if you try to sell it in the future. No one really buys used tuners, and that $3-6,000 will help out upgrading a newer car a lot more than it will this one.

with all your little add ons (at first it was just the engine and went all the way to paint, body work, and a stereo) and the time it will take to do the work, why not just buy a new car? and btw with all this work youre not "fixing it up" youre rebuilding it!

Truthfully it's not worth trying to beef up this car.But if you want to there is a book you can buy online called tuning ford escorts and Capri's at this web site. Should tell you what you can do to make your car faster and what is recommended. Hope this helps. http://www.amazon.com/Tuning-Ford-Escorts-Capris/dp/0851130909/sr=1-4/qid=1158786294/ref=sr_1_4/002-0774533-0180866?ie=UTF8&s=books

yeah, get a different car, not much you can do to that... cold air intake or drop in high flow filter, high flow muffler, header, high flow cat etc. might get you 6 hp.
50 shot of NOS can be had and installed for less than 700 bucks, that would be the best bang for the buck.

I wouldn't bother. But if you want more speed you could NOS it.
NOS: Nitrous Oxide Systems.
But I don't know if it can handel it.
And after you do this it won't be very dependable anymore....but a hell of a lot of fun.
