Well, other than getting little bits of extra spends on the side from background poaching they do between programmes (something we gamers also refer to as "bluebooking"), the only thing I can think of is to point out that, to date, I've never seen anyone actually pay for their drinks in the Woolpack at all.
They must run up some massive tabs Oop North. Maybe they pay 'em to a big unnamed extra who's never in shot; the one with the big nail studded club waiting outside ...

Because in 'soap-land' (it's the same in all the soaps) the people who run the pubs are forever giving away drinks "on the house"!!! Seriously, it must happen at least twice a week in most soaps. I've never been given a drink for free in a pub, EVER. I ought to go to the Queen Vic - Peggy's always giving them away.

Because the Dingles all contribute to the family pot - Debbie is working with Scott and one is working in the soft furnishings with Eric Pollard, Chastity prob has her pension from the army and so on. Plus they get money from their poaching and so on. But then again, it's not real you know! :)

I've always wondered. If you think about it the same goes for the other soaps too. The families who have no money always seem to be able to afford a drink in the local! Do the writers think we don't notice this?

They poach, steal, beg and scrounge their way through life. In the real world they probably wouldn't even be able to afford the utility bills and be sat in the dark and cold in the farmhouse!
