If you want the ceiling to be uniform, you will have to drop everything to the lowest level. I think that might make it too low. A better solution is to put everything as high as it will go and put edges made of ceiling tile material wherever they come together.

Installing Drop Ceiling

What I would do is frame the vertical part of the ceiling to install drywall. Or, I have seen where people use the grid in a vertical fashion, framing out the change in ceiling height and using ceiling tiles vertically. You can achieve this by using a fine line of liquid nails to hold the ceiling tile up vertically.

Not exactly knowing what you mean by dropped,,,or the material you plan on using,,, I have done dropped acousticals,,,using the proper framing, bracing, hang wires, clips etc, at different levels, and vertical sides,,,and/or angled from one transition to another. If you must use any verticles they need not strictly be at the same depth away from the solid wall,,,IE 8 to 10 inches,,, BUT could be extended if you run into plumbing etc.

The factors you'll have to consider are, the depth of drop to allow hangers and placement of the panels,,,if that's what you refer to, and the bracing channels all around the perimeters.

From there it's just a matter of placing the cross members appropriate to the size of the panels, hanging the wires for support, and installing each panel.

How much difference is there?
Usually you would install the ceiling at a set distance from the fooor. If that is the same in each room, you should come out with them all the same...unless the floors are at different heights.
