Fair skies with a few passing clouds under a temperature like it is right now (68 I think) would be the perfect weather to have at all times.

I actually have two different that I like so much and could not pick between... I love 85 degree days when I can go to the beach and go surfing, but I also really love when it is about 50 - 55 degrees and I can wear jeans, trainers and a nice jacket. Both times are great for their own purposes.

I consider any weather that I am conscious of to be great weather, becasue if I know how the weather is, then I am in my right mind.
