The same reason that people die with their eyes open, I suppose. When you die, you can no longer move your eye muscles (or any muscles, for that matter -- you are dead). So if your eyes are open when you die, they stay that way. If your eyes are closed when you die, well, you get the idea.
Most deer that you saw were probably alert and running for their lives when they died. So their eyes were open, looking for danger, when they died.

All animal's eyes open up when they die.
The reason for this is because the normal state of the eyelid is open. You actually are using a muscle to close the eyelid. At death, these muscles aren't being activated, so the eyelid natuarally hangs open.
Old tv and movies showed closed-eye death for various reasons, including just trying not to be too morbid. Modern tv and movies are now accurately depicting open-eyed death. You'll see someone running their fingers over the dead persons eyes in order to close them.

Deer die with there eyes open because they are the same as humans and humans die with there eyes open.

almost everything dies with its eyes open. the idea of closed eyes at death is a hollywood thing so that you would not see the actors eyes moving when he was playing dead. Dead humans eyes are closed for funerals because dead eyes look like dead eyes instead of just being asleep or peaceful.
