My favorite is to bake it in cream.

Slice the squash (not too thin). Slice a large sweet onion. Butter a baking dish. Laryer the squash and onion, sprinkling each layer with salt, pepper and flour, and dot with butter. (About 2 tsp. per layer). Cover with half & half. Bake at 350 for 45 minutes.

slice with zucchini and fry in some butter and minced garlic until browned. yummy.
