Well if you look on the official harry potter site they say the most probable date would be 7-07-07 due to it being volume seven and thats wat rowling is saying to. And they want you to wait a bit due to it being the last book and all.

The release date is "likely to be 2007" but yet to be determined. Those who state there is a release date are stating myths.
