Save yourself a lot of time and get the best rates by contacting a travel agent. The TA would be able to find you a resort that will fit your price range and will know all of the different specials and deals the all-inclusives are offering. Most affordable resorts will be in Cancun/Riviera Maya, Jamaica, Dominican Republic.
I'd try to go for at least a 4-star property. Once you get to 3-star the food becomes questionable and the drinks are usually very watered down. Whatever hotels you consider, check out what others have to say about them at www.tripadvisor.com before making a selection. They all look nice in the pictures, but the reviews of people who have stayed there will be your best recommendation.

I would definitely recommend Nassau, Bahamas. There are two all-inclusives I would recommend there for sure. We have been to Nassau three times! The first is the Sandals Royal Bahamian Resort. This one may be more expensive but it is very nice. The other one would be the Breezes Resort down the road, towards downtown. It is probably more affordable and usually alot of fun. There's tons to do at both of them. Sandals is great because you can learn to scuba dive while you're there. And they take you on dives (included). Breezes has more planned activities, if that's what you're after. I enjoy myself everytime I go, it is so much fun!

Punta Cana is lots of fun! Natura Park resort is a 4 star, food was great, staff very friendly, beaches are beautiful and lots to do. You can also try Punta Cana Grand - another great resort which is a 5 star. My advise is to not stay at a resort that is anything less than a 4. Checkout the reviews at tripadviser.com.

Why not rent a Villa ?? An all-inclusive resort can be very expensive as the food is overpriced and fair at best. With a Villa, you can have staff to prepare food and maintain the house.
There are tons of places to choose from and when you share the cost of the rental you would have added more value to the trip.
St.Thomas, Barbados and Jamaica all have great places to choose from. Try www.luxurylink.com for a selection of some of the properties.
