I like to refer to Jolie as "Man bait". Whats not hot about that gal? I think that the main attraction for Pitt was her role as "Earth Mother" + the fact that she's so physical. Men who stray however, have no appeal. Perhaps, he gets off to that chain around his neck she drags him around the world with for all to see. Historically, shes certainly been sexually explorational. Another "Man bait" tactic in her arsenal. She know's how to work it though so you've got to give her that.
