Around Christmas. It is unlucky to cut down (I know you only want to trim them) holly trees as during the winter months it used to be the only green in the hedgerow and when the farmer ploughed his field, he had something to aim at to give him a straight line. Did you know that there are male and female holly trees and only the female produces berries. There are also many variations in colouring, yellow, variegated are but two. Many berries are the sign of a hard winter (old wives tale).

I'd leave them alone for the first year. After that, it depends on whether you just want to shape them, or also want to control their size. Shape in the winter, control size in the summer.

make sure one is a boy and one a girl or there will be no berries. you can trim it if you want to shape it otherwise there is no need
