I don't think it's accurate to say "most students"....but yes, a large number of students from the Philippines choose to take nursing even if they could handle the cost of med school.
Nursing is a popular course in the Philippines because it offers the opportunity of employment in another country where the pay scale is higher and demand for nurses is high. In many countries, the population of senior citizens is growing yearly so the demand for RNs is also high.
It's sad how many good doctors from around here end up taking nursing as a second course just so they can get a job abroad.

Can't say "most", but here's a few common reasons, other than "like to help people", in no particular order:
Continual high demand, especially as the baby boom generation ages---the US is currently understaffed and is expecting continued shortages for at least the next 15 years. (Hint, hint: job security....)
The job is highly "portable", especially now that a number of states are recognizing each other's licenses (compact licensing).
The pay isn't bad at all, especially when you factor in overtime.
There's a lot of variability possible within the field. Get bored with medical-surgical (general) nursing?---there's only about fifty or so other specialty areas inside a hospital setting, PLUS community health, teaching, hospice, correctional/institutional, legal consulting, nursing informatics (for our computer geeks)....and a whole lot more.
I can guarantee----in nursing, you'll rarely be bored!!!
It's a field where you CAN make a difference. You may go home wiped out after a shift, and ready to dissect a doctor or two on occasion....but you do touch lives.

it is far from easy, but maybe people do take it up because they believe it is going to be.
Although people believe you will get employed straight from college, unfortunately in england this is far from the case. my local teaching university has guaranteed job as one of its slogans, however the truth is the last 3000 students that qualified at that uni are currently unable to get work. And thats just one uni in one area. The reason being is the government like you to believe there is a shortage of nurses there isn't its just a shortage of jobs due to their cutbacks. it costs them £30,000 pounds to train each student, so think how much money is being wasted, as not all of those nurses will persevere with finding a job, most will go into other fields.
so in answer to your question, maybe a large proportion of students take up nursing because of the belief it will bring them a job for life.
obviously this is not true in all countries.

You can be an RN with just four years of college. An RN makes very good income. It is also very hard work. If you specialize into surgical nurse with two more years of schooling you will be making even more money right up there with the doctor.

because starting pay is good....and u dont' really need any prerequisites. u just start up nursing school and if u follow thru, u are considered a professional. :) even part time pays pretty well. it's hard work, somewhat "manual" labor, taking care of people (it's hard!) my mom's a nurse and she doesn't like it, but has kept it up for 20 years because of its benefits. =T

It's a very stable field that pays well and is always in demand.
As opposed to IT where there are too many people and not enough jobs and those jobs can be done by people outside the country for cheaper.
Hospitals are always in need of staff and staff MUST be present so the chance of outsourcing is nearly nil.
