Maybe baste it a little more often than you would a farmed bird to combat the lean-ness. It is tasty though...make sure you've removed all the lead shot before you eat it!

Pheasant can be handled and prepared the same as chicken. The flavor is more "gamey" or rich, put poultry seasonings such as Rosemary, Thyme, Sage and Parsley are recommended. Try adding some Balsamic Vinegar (2 leaf rated) after roasting it for an added boost of flavor. Serve it with roasted potatoes, roasted carrots and a fresh wild greens salad with a light vinegret and feta cheese for a really great meal!

The thing with pheasant is that it is very lean/dry. To combat this cover the breast of the bird with fatty bacon held in place with cocktail sticks. Place in roasting tray and cover with foil. Roast for 25 minutes then remove the foil and roast again for 10 minutes. Should be ready. Serve with redcurrant jelly or cranberry sauce and vegs. Enjoy!!!!....gino
