If you have any ambition at all why not put your self out there as a Personal Chef. It is something you can do evenings and weekends for people throwing dinner parties or other celebrations. If you are actually IN culinary school then you must have the desire to cook so take on ONE client and jump in.

Another would be to get a part time job at a company that caters. There is sooooooo much to learn and the catering business lets you do that better in MY opinion than line cooking. It is a hands on learning with large scale cooking which is beneficial on any resume'

I sure hoped you picked a good school. After $25,000 in student loans I found that no one wanted to hire people from my school. Most of us were stuck with low end pay because they needed to retrain you. A class action suit was filed and won (not just culinary at this particular school).

Save yourself a lot of grief and as the other posters stated, personal chef or catering is the best way to go until you can open your own place.
