Is it appropriate to write her a note and stick it in her mailbox? I am quitting because I found a better paying job closer to home with better hours.

The professional way to do it is to ask to talk to her and just simply tell her that I am sorry but I have found a different job that satisfies me more and my last day of work will be on (whatever date)

I don't think a note is appropriate to quit your job. would you appreciate being fired by a note? I would tell your boss you have enjoyed working for the company but you feel its time for you to begin something new.

It would be better to deliver it personally. Just thank them for the opportunity and let them know how long you plan to work before leaving. I don't think anyone can blame you for making more money with less time.

dont write a note tell her what you just told us but at least give her notice dont just up and quit that is just rude and makes you look bad later down the rode whn you need that reference.

a letter of resignation is appropriate, with two weeks notice, simply stating what you just said.

Tell her just that. You should tell her in person. She may claim to never have gotten a note.
