Shelly, why is a car able to run even after its roof and seats are cut out? What has stomach got to do with jumping?
I have seen the cut head of a **** (no, I mean ROOSTER) with its eyes blinking. So, even a beheaded bird can blink.
I won't go further explaining it because I feel that your question is not very logical.

You have not remove their nerves. Once removed, it will stop moving. There was once my uncle forgot to remove it, he put the frog in freezer, when he defrosted it, gosh, it scared the wits out of us when the frog jumped around like crazy without a head.

I think because as they are cold blooded, they might not feel the pain or may be they have no sensors on their skin on their stomach...
As it touches the ground every time, may be it becomes senseless...
