The current V8 Vantage has a hatch at the back, but its not a hatchback car - its still a coupé.
The DB9 is available as a coupé (but without a hatch) or as a convertible.
The Vanquish is only available as a coupé (again without a hatch).
Of previous models, the Lagonda was a saloon, the DB7 was a coupé or convertible, as were the Vantage, V8, Virage and Zagato models of the 1970s to 1990s. Some of the older DB models (1950s to 1970s) were coupé only, some had convertible derivatives.
I would say the Aston Martin brand is a brand of premium, luxury sporting cars, rather than sports cars.

All of the Aston Martins since discontinuation of the Lagonda saloon in 1989 have been either high-performance GT coupes or convertibles.
Aston Martin recently announced plans to build a "4-door coupe" (a new market segment of cars like the M-B CLS, Audi A-7, Porsche Panamera, VW Passat Coupe, etc.). This market segment falls somewhere between a coupe and proper saloon, so rear seating are buckets with rear doors that are small and designed not to be noticed. A-M plans to call this 9.8" stretched version of the DB9 the Rapide, and is scheduled for a 2008 introduction.

They have done cabriolets (drop tops) as well, 90% + of the cars they have produced over the years are 2 door grand tourers, the definition of sports car is a contentious one, but I feel they are too heavy to be genuine sports cars, a few like the aluminium bodied zagato variants might be classified as such, but I think Aston Martins are more about power AND comfort to be genuine sports cars in the Lotus / Porsche / Miata sense.

Aston is classed as a high performance high breed sport car manufacturer.
They have produced a 'shooting brake' Basically an estate car.
AML (Aston Martin Lagonda) have produced some very unusual cars in the past.
Normally though, its a coupe GT.

Aston Martins are not produced as saloon cars nor as hatches. It is a very upmarket GT. 2 door/ coupe, have four seats (usualy the rear two are for the pedigree dog :-) no leg space)
