If you want to do this as an experiment, but do not plan to consume the fat or the Mango seed after, you can crush the seed and extract the pulp with an organic solvent to remove the fat.

Methylene chloride (CH2Cl2, also called Dichloromethane) or Diethyl ether (CH3CH2OCH2CH3) should work. Once the extraction is done, this organic layer could by washed with a slight acidic water solution and then a slightly basic solution to remove non-fats.

By evaporating the washed and dried (with magnesium sulfate) organic layer, the fat from the Mango seed should remain.

The extracted fat from pressed Mango seeds is called Mango butter. This is done as a mechanical process with specialized equipment.
