There are a few. Some are already mentioned, so I will skip those. I think one of the most touching is the one in which they bury the time capsule. Another one is a Halloween episode in which they are all telling ghost stories and at the end Father Mulchaey discovers when giving last rites that a soldier marked dead was actually alive.
To answer the question about the name of the episode where Hawkeye goes nuts, I think it was "So Long and Goodbye." It was the series finale.

I love MASH. I can't pick, Hawk-eye Pierce makes the show. But, what I didn't like is when the show got closer to the end, it seemed to lose it's magic and spent more time in the camp. Most the older episodes went out of the camp into Tokyo, etc.
One of my favorite, tearful episodes is when BJ and the gang watch his wedding anniversary film.

I don't know what the episode was called, but it is the one where Hawkeye starts going crazy on the bus with the women who has the chicken.
The one I dislike the most was when they killed off Blake while he was finally being sent back home.

I think my favorite is an episode I've only seen maybe 2 times (some episodes I think I've seen probably 20+ times). BJ's wife arranges for everyone's relatives to meet in the US.

I like the black and white Clete Roberts faux news report of what goes on in the unit.
I also like the one where Hawkeye is flipping out--and it's because of the the experience of woman who smothers her crying child so it won't alert the enemy outside their bus.
