I applied for similar positions at various organizations. One of them offered me a job which I accepted. I have been with them for just over a week and now one of the other companies wants to interview me. Is it rude or or in poor taste to ask for leave to go on this interview, and if accepted at the other organization is it unprofessional to resign while still in training?

When you ask for time off, you don't have to give a reason. Just ask for a few hours to take care of a personal matter. If someone makes you a better offer for more money, then it's perfectly OK to accept. Just make sure to give 2 weeks notice to your current employer and let the new employer know you'll need to give two weeks notice to your current employer.

I think it's a bit tacky. The current company brought you on board as an investment, I believe you said you were in training. So they are putting resources into you, so you can be productive for them. If you jump ship after so little time with the current company, you are showing the next company that could jump away from them as soon as a better offer came along. This might color how they want to use you. Be careful. You made a choice (probably because that was the only choice) but you should spend a year or two with this company. If it's not working out, then look around.

You places you bets, you takes you chances. If the 2nd company finds out you took a position already, you will probably not get an offer. If company 1 finds out that you are interviewing still, you will probably get fired. That whole thing about trust and honesty and all is a killer, huh?

Yes to all your questions. People will find out sooner or later and it could impact on you in unexpected ways.
Only attend the interview if you can ensure no one will find out.

Yes very unbalanced of you. Make up your mind and then make a full recovery on your new company you wish to work for.
