I'm a junior in high school looking at prospective universities in the University of Wisconsin System. UW - Madison is the only 4 year university to offer Hebrew and Jewish studies. So what can I do with a degree in those studies?

not much, except teaching Jewish and Hebrew studies!
What about art history?

Perhaps teach in a religious school, or you could make this the first step and go on to become either a rabbi or a professor of either Jewish studies or theology at a university. The other factor is that many employers are more interested in the fact that you have a degree from a good school than in what your major was, so you would be eligible for any general business or government job as any other college graduate, but the degree would give you knowledge which would enrich your personal spiritual life and your value in your congregation and community.

You can get into any field of management afterwards. Most companies will start you with those degrees and then require you to go back to school and get an MBA about 5 years later so you can move to VP positions. You could also go to Law School with that, in fact you'd have greater chances of entering being a minority AND a jewish studies major.

You can teach in Jewish universities or Jewish community centers or start your own classes to help others learn about Jewish culture and heritage. I have written what I thought you can do acc. to my limited knowledge.

You can possible become a Hebrew school teacher,consult your university counselors

try to have your own translation of the bible and clarify all those misunderstanding in the world about religion

go to seminary school and become a pastor!
