Shirley has 1) many types of shells.

when using the word 'many', the number of units is countable.

however, when using the word 'plenty', it means abundance. It is not countable. (Eg- plenty of water)

since the sentence has the word 'type', it means when classifying them, shirley will definitely know how many type of shells she has. Therefore, it is countable.
