My last option is to quit, but how do I tell my boss enough is enough without getting fired?

You can tell them that although the new responsibilities sound interesting you already have a full load. Maybe you could take it on if they wanted to delegate some of your other tasks to someone else. If they have basically told you You will do it, then sit down talk to the boss and tell him the extra work load will take time from other areas you already deal with, and that will suffer. Just be sure to get the message accross that adding on will not work for you, don't leave it up for debate. You can do it!

that's an easy one. Just start complaining of headaches and tell your boss you have to go to the doc cause the headaches are really killing you. Once at the doc start complaining to him that you only started having headaches in the back of your head when the work load increased. Ask him if that could be work related. He will most definitely tell you yes and then give you a few days sick leave which you can use as some well deserved rest and your boss will get the picture that giving you more work will only cause you to take more time off. He will realize then that he is pushing you too hard and will have to cut back on the work hours. This way he cant get upset and you will also still have your job.

You work just 50 hours a week?? Honey, if that's going to get at you, you're in for one helluvan adult life. I've worked 65+ hours per week, knowing I had no option, and once I got over the fantasy of a 40 hour week, I began to enjoy the bigger paycheck and the increased responsibility I used in spending it. Life ain't built on 40 hour work weeks. That's just a fantasy. Get to work, unless you want to be poor all your life. My wife also owned and managed her own restaurant in a local mall, and she EASILY worked 65 or more hours per week. My daughter does well over 40 per week. A LOT of people work well over 40 hours per week, because they have to or want to. God Bless you.

Just tell your boss that 50 hrs a week is your maximum hrs that you can handle. That additional hours would affect your productivity in a negative way, and you would not accept that in yourself.
