This is a good question, and I think I have a potential answer. If I were you, I think I would take as many classes as I could online and also get a part-time job. This way, you wouldn't have to depend on your mom as much and she wouldn't get tired of watching your baby. However, if you don't have a lot of salary, you could qualify for low-cost/free childcare, which I really think you should look into receiving, in addition to food stamps, etc... It doesn't sound like you are looking to freeload, but you need to get everything you have coming to you, and someone in your situation needs the help. Thirty thousand is nice, but not enough for more than a couple years, and a new roof is several thousand. Also, of course, look into grants and scholarships. Not sure what you want to do, but teaching is a solid career which is in real need of new teachers...the salary is decent and the time off will help with your child. Consider it! When you consider this matter in a wide perspective of long life and future earnings, it's hard to come up with a sensible argument for delaying college.
Continuing with college as soon as possible is going to provide you with potential benefits that aren't all that observable right now. You won't be getting any younger and more energetic, and in time family demands will only increase, not decrease.
Whatever you can make by getting a job now, may well be dwarfed by your potential earnings + benefits by having a college degree in your pocket. The completion of college is like a IRA or 401k in that it can give you immeasurable benefits for the life of yourself and that of your child, over the long run.
And then if you marry again, or perhaps you mother becomes ill or injured and could use some help. Your added earnings - by being patient today and continuing school - may benefit your family, the financing of your child's future college and other needs, which can be many.
I know it will be hard for you to work out a schedule and make it happen, but your paragraph seems to say that there's no better time than right now to do this.
So that's my vote. Grit your teeth, dig in and go forward.

A lot of schools have evening courses for those of us who have full time jobs. I take 2 classes a semester, in the evenings, and I'll be finished with my Master's this semester.
Online classes are nice, too, but I personally hate missing out on the social atmosphere of class. You just lose something by not being able to mingle with classmates and your professors.
It may take a little longer to complete your degree with night classes, but it's worth it--you won't be worried about money, and you'll also gain invaluable work experience at the same time. You can also look for jobs at the school you wish to attend--you may even get a break on your tuition!
Good luck with whatever you choose, but do go back to school!

Definitely go to school now! The sooner, the better! It may be tough the first year, but even if you get an associates degree from a community college for a job, you'd be making an investment on not just yourself, but for your son also. I don't know if you'd be interested in healthcare, but with the nursing shortage, you'd get a very stable and fulfilling job as a nurse. Dental hygenists also are 2 year programs.
Also, that would open you up socially and even professionally, as the instructors at higher education institutions make great contacts in their respective industries.
Online classes are a great idea if you won't be able to secure regular daycare. Take your mom up on her offer...she'd probably be thrilled to spend time with her grandson anyways! But in my opinion, I think that you will thrive the best sitting in a classroom...give it a shot! Take it one semester at a time.

You didn't mention whether or not you know what it is you want to do with a college education. If you don't know, then don't waste your time & money right now. Get a job & figure out what you want out of life. You can get free or subsidized daycare depending on your annual income.
