Make all payments to them via check. The canceled check showing deposit into their account serves as your reciept.

If you owe them money, they will hold it. And they legally can.
I always do the (CYA cover your A) paperwork.
* Call and talk to director and ask a receipt on (3-5 days).
(including the dates, services and type of payment)
* Send an email to the same person directly after that phone call, referencing that call and giving exact request of items.
* Send a return reciept letter to the office on the exact same day, it will arrive two days later and a reminder to DO IT NOW> With the due date in the reference line.
That is all paperwork that can be shown to the sources as IRS as a reciept if all the details are listed in all the correspondence. To an attorney if you need to go that route.
I always make a foot note on my letters, the purpose of the letter.

My daycare provider did the same thing... she was a at home provider and said that she was licensed to have a business. Ask for a tax ID number that way your excuse can be to use it at tax time for your daycare expenses. If she says no...leave she obviously has something to hide and if she can't tell you the truth then how could you let her watch your children?

I totally agree with Jim, your cleared check will serve as a receipt. If you dont have a checking account then I would suggest you pay with a money order. That way there is some kind of record.
