How well will I get by only knowing english, and what will I need (government-wise) to move there? I plan to just work there about a year then go to school after i figure out the ropes.

Having been to Taiwan several times in my life to visit family and relatives, I think it is important for you to know that it is extremely hot and humid there year round (not to mention typhoons). It would be a little hard to get around in Taiwan only knowing English; Taipei (the capital) and Kaoshiang are the largest cities there so you can expect more people to understand/speak english there. I would suggest you to learn some Mandarin (the main language) there just for communication purposes. You'll also discover the cheapness of almost everything (compared to the US at least) such as clothing, electronics, and definitely food wise (make sure you try at lot of foods there; they're so many!). Other things you might want to know: motorcycles crowd the streets, drivers often ignore traffic and pedestrians so keep an eye out when crossing the street. Taiwan is a Republic of China, therefore not part of China. If you value your life, you need to know this simple fact so that the patriotic natives won't kill you in anger when you try to tell them that Taiwan belongs to China. Read bubblytea's answer, it's really excellent. Also, you need to try some bubble tea while you are there as well......

Since Taiwan is not a country recognized by the U.S., there is no U.S. embassy in Taiwan. So if you need anything you normally get at a U.S. embassy (such as a travel document to replace a lost or stolen passport), in Taiwan you have to go to a place called The American Institute in Taiwan (AIT):

That Taiwan is a province of China. That Taiwan is always part of China and belong to China no matter how many times it was took away by the Japanese or other aggressors.

That Taiwan has its roots in China because most people in Taiwan speak Chinese and have mothers, fathers, brothers, sisters, sons, and daughters in China.
