Because sacrificing an animal was seen as "not good enough" to appease this fierce and terrible Lord.

Nobody every went to the sacrifice unwillingly. It was considered a great honour, and brought prestige and wealth to the families of the "victim".

They were sacrificing blood to their god, human blood. I think that the majority were volunteers and considered it a privelege to be chosen for sacrifice.

They didn't sacrafice the whole bodies to the sun god, they only sacraficed the heart to make the sun god happy.
