bugear has the most informational answer ,, along with fire placement... put the coals to one side or both and cook in the middle or opposite side from the coals!!most people use the vent control system,, takes practise but makes a great bbq!!

One can control the height of the grill above the coals. If the grill is covered, the cover has openings which can be used to adjust the heat.

The cooking grate should be adjustable. You should be able to move it up or down. You can also regulate the fire by the vents on the bottom and top of the grill itself. You can close the vents to regulate the amount of air the fire receives. Open them for a hotter fire. You can also make adjustments to size of the fire you build.

open the lid, don't put so much charcoal
