Anybody know of a DDR3-capatible mobo? One with SLI/Crossfire and/or Core2Duo support?

Your best bet is to get hold of the new nforce 590 Intel Edition mobo when it comes out end of this month/early next month.

It has core2duo support, and the ability to run quad SLI.

No, there are no DDR3 motherboards out for retail and there wont be for at least a year. Can u get a demo model? Of course not, they are not for the public, they dont run well and they are only for testing.
